5. Harvard Beets
Ingredients
1½ teaspoons cornstarch
¼ cup sugar
¼ teaspoon salt
⅛ teaspoon pepper
½ cup vinegar
¼ cup water or beet liquid
2 cups thinly sliced cooked beets
1 tablespoon butter
Method
Combine cornstarch, sugar and seasonings. Add vinegar and liquid.
Bring to boiling point and cook for 5 minutes, stirring constantly.
Add beets and heat thoroughly. Just before serving add butter.
